"Patisserie" holds an important part in Alsatian culture. Joëlle Trotter never imagined that making Christmas "Bredele" with mother and grand-mother could lead to creating meter high cakes.
In 17 years, she has moved from the legal profession where her exactness was expressed, to travelling the world with a major airline discovering cultures, flavors, colors, to being qualified valedictorian french "patissier".
Joëlle's creativity with textures and flavors lead her into testing her hand at cake design in 2015. January 2016 she was finalist in the "french championship of cake design".
Today, from her laboratory "Studio53" on the Paris outskirts, she plies her gifts bringing together what this city lives by : arts, design and gastronomy, a pleasure to the eye but especially an excitement to the papillae.
